Stirm's Wirz Vineyard bottling comes from own-rooted, dry-farmed vines planted around 1900 in the limestone soils of San Benito's Cienega Valley — a field blend where Zinfandel shares the row with Mataro, Carignan, and rare Cabernet Pfeffer, plus about 10% Riesling worked in. Whole-cluster fermented in redwood and aged nearly two years in seasoned barriques, then bottled unfined and unfiltered. Give it a decant and pour alongside grilled lamb or a peppery stew.
