The FAY Vineyard is where Stag's Leap Wine Cellars' story starts — Nathan Fay planted the first Cabernet Sauvignon in what's now the Stags Leap District back in 1961, and the winery has bottled it as a single-vineyard wine since 1990. Expect black cherry, dark berry, and a hint of violet, built on a Cabernet Sauvignon base rounded out with a touch of Cabernet Franc and aged in French oak. Pour it alongside a grilled ribeye or aged cheddar to let those polished tannins stretch out.
