Sotol isn't tequila or mezcal — it's distilled from Dasylirion (desert spoon), a wild desert plant, not agave. Coyote's Chihuahua Blanco comes from Aldama, where Maestro Sotolero Gerardo Ruelas hand-harvests the plant, pit-roasts it in a cylindrical underground oven over pecan wood, ferments it in pine tubs with well water, then double-distills in handmade copper stills. The result is earthy and herbaceous, with citrus, lime, and a long, forest-floor finish. Try it neat to taste the desert, or in a Paloma-style riff.
