Sombra - Joven Mezcal Ensamble
This special expression of Mezcal Ensamble is made of 61% Tepeztate, part of the Agave Marmorata family. The elusive Tepeztate can take up to 25 years to mature wildly and grows mainly sideways in steep and rocky cliffs.Due to its wild and rare nature, we must be careful not to over-harp, to ensure the future of this beautiful plant.
Maguey Tobalá makes up 39% of our Ensemble and is part of the Agave Potatorum family. Tobalá grows in the wild at high altitudes for 10 to 15 years, and due to its relatively small size, produces intensely aromatic but extremely limited amounts of mezcal mezcal. The Tobalá is getting scarcer. Unlike most other agaves, Tobalá can grow from seeds and Shadow has been in charge of planting Tobalá agave each year.
Shadow Ensemble is made to enjoy yourself only and at room temperature.
Weak, creamy silver tones. In the bucket, a vegetable and citrus aroma with touches of honey and pepper. On the palate, notes of bitumen, tobacco, orange peel and salted caramel lead to a long and luxurious finish.
