Here's a mezcal that lets two agaves share the spotlight: fast-growing Espadin and wild Tepeztate, the cliff-dwelling maguey that can spend decades maturing before harvest. Made in San Dionisio, Oaxaca, the agave roasts in an earth oven over wood and river stones, gets crushed by tahona, ferments with native yeast, and is twice-distilled in copper. Expect ripe citrus, tropical fruit, and green herbs like oregano and lemongrass at 44% ABV. Sip it neat, slowly, and let it unfold.
