From Shiloh Winery's vineyards in Israel's Samarian hills — planted in limestone-and-clay soil roughly 800 meters up — comes a Cabernet Sauvignon built for the long haul. Eighteen months in French oak coax out deep aromas of ripe blueberry, blackcurrant, tobacco, sage, and eucalyptus, framed by rich tannins and a full-bodied, unfiltered structure with a long finish. Pour it alongside grilled lamb or aged hard cheese and let it breathe for an hour before serving. Certified kosher (OK, Chug Chasam Sofer (Bnei Brak)).
