Sotol isn't an agave spirit; it's distilled from wild Dasylirion, a desert plant Durango's sotoleros have worked for centuries. Señor Sotol's Joven blends three Dasylirion varieties (Texano, Cedrosano, Wheeleri), cooked in an underground volcanic-rock pit, naturally fermented in wooden vats with mountain spring water, then copper-pot distilled by maestro sotolero Juan Manuel Conde in Durango. Expect smoked cacao, sweet tobacco, and vanilla with a peppery finish. Pour it neat to taste the terroir, or shake it into a smoky, herbal cocktail.
