Segal Special Reserve Chardonnay is a dry white wine from Israel's Upper Galilee, made by Segal Wines, one of the country's oldest producers (founded 1925, based in Ramle). The winemaking team ferments free-run Chardonnay juice in a mix of American and French oak barrels, carries it through malolactic fermentation, then ages it sur lie for seven months to build texture. Expect a straw-pale pour with tropical fruit and pineapple up front, vanilla and cashew from the oak, and a lemony, crisp finish. Pour it alongside roast chicken, buttery pasta, or aged cheeses.
