Most tequila today gets pressed by machine, but San Matías went back to the tahona: a massive basalt stone wheel their distillery has used for over a century, slowly crushing cooked blue Weber agave to coax out every mineral note. Made in the Jalisco highlands and rested three months in American oak, it opens with baked bread, honey, and vanilla, then turns silky with a whisper of cinnamon. Sip it neat, over ice, or stirred into a Paloma.
