Most añejos lean on the barrel, but this one starts with a stone. San Matías crushes its cooked highland agave with a tahona wheel, then rests the spirit twelve months in American oak. The tahona method keeps the agave front and center: expect pear and green fruit, vanilla, pink pepper, and warm cinnamon, with deep agave sweetness and a whisper of oak underneath. Double-distilled in copper pot stills. Sip it slowly at room temperature, or pair it with dark chocolate.
