Salvador found African water buffalo at an Oaxaca City butcher counter and built a mezcal around it. For Búfalo, buffalo meat hangs in a net inside the copper pot still during the second distillation, alongside Oaxacan fruits — tejocote, mango, guava, star fruit — steeping into the spirit. The espadín agave, aged eight years, is cooked in an earthen pit, crushed on a stone tahona, and double distilled at Casa Palacios in Tlacolula de Matamoros. Expect citrusy, fruit-forward mezcal with cooked agave and a whisper of cinnamon.
