Here's a right-bank Bordeaux with a great backstory: Pavillon de Taillefer is the second wine of tiny Château Vieux Taillefer, a 4.8-hectare estate on the banks of the Dordogne run by Catherine Cohen, who trained as a winemaker at the famed La Fleur-Petrus. It's 100% Merlot from Saint-Emilion clay and gravel soils, pouring deep ruby with violet, blackberry and a Pomerol-like silkiness over calcareous minerality. Decant it and pour alongside roast lamb or a mushroom risotto.
