Madrecuishe is one of the wild Karwinskii agaves — tall, slow-growing, and worlds apart from everyday espadín. This joven comes from Apolonio Ramírez Cruz, a fourth-generation mezcalero in San Agustín Amatengo, Oaxaca, who roasts the agave in an underground pit, crushes it by stone tahona, ferments in open air, and distills in a copper still. Bottled at 40%, it leans soft and earthy with a gentle wisp of smoke. Sip it neat, slowly, with an orange slice alongside.
