This one goes further afield, built on Russell Henry London Dry and infused with the fruit and leaves of limau purut, the fragrant Malaysian lime, grown at a California exotic-fruit orchard. Distiller Crispin Cain macerates it, then redistills on an antique cognac still for a gin that's deeply citrusy, gently bittersweet and herbaceous, finishing like silk. It picked up a Chairman's Trophy in 2020. Pour it into your best gin and tonic.
