Sambuca has a reputation as a syrupy shot bar, but Romana's version is the real deal from the Pallini family in Rome, spirit-makers since 1875, working from a recipe dating to 1945. Green and star anise get distilled, then blended with elderberry extract and licorice, so star anise leads, warm spice and berry sweetness build mid-palate, and it finishes with honeyed anise. Try it neat with three coffee beans dropped in, the classic "con la mosca" pour.
