Robert Mondavi didn't just make a Sauvignon Blanc — he renamed it. Inspired by the Loire Valley's Pouilly-Fumé, he coined "Fumé Blanc" in the late 1960s to signal a different approach, and it's still built that way: mostly barrel-fermented in French oak with regular lees stirring, plus a splash of Sémillon for weight. Expect citrus, melon, and a peppery, mineral finish. Pour it alongside grilled halibut or a goat cheese salad.
