Recanati Bittuni is a rare varietal red from Israel's Judean Hills, made entirely from Bittuni — an ancient indigenous grape nearly lost to time before Recanati Winery revived it from vines found on a stony, terra rossa hillside near Hebron at 750 meters elevation. The grapes are hand-picked and fermented as whole clusters, then aged twelve months in large oak barrels to keep the variety's delicate character intact. Expect a light, floral glass with real minerality, red cherry, and Mediterranean spice on the nose. Serve slightly cool alongside roasted lamb or grilled vegetables to let its softer tannins shine.
