Some agave grows tall like a tree — maguey Largo, a karwinskii that can take close to two decades to mature before it ever meets fire. Real Minero's multi-generation Ángeles Carreño family roasts it in an earthen pit, crushes it by hand with a wooden mazo, ferments on wild yeast, and distills it in small clay pots the ancestral way. The result runs peppery and green, with peanut, coconut, and a whisper of citrus. Pour a little in a copita and sip it slow.
