Raeburn's Sonoma County Chardonnay comes from a Russian River Valley winery founded in 2014, named for the egrets that patrol its watersheds. It's 100% Chardonnay, barrel-fermented and aged nine months in French and Hungarian oak (half of it new), which explains the toasty vanilla and crème brûlée notes layered over pear, Gravenstein apple, and nectarine. Cool-climate acidity keeps it from tipping into heavy. Pour it alongside roast chicken or anything butter-sauced.
