Raicilla is often called tequila's wilder mountain cousin, and this bottling from the Sierra Madre of Jalisco shows why. Distilled by Juan Ramos in the town of La Estancia from Agave Maximiliana (locally called Lechuguilla), it's roasted in an adobo oven, shredded, and twice distilled in a pot still. Expect light citrus and florals with hibiscus, pineapple, and a green, peppery snap. Bottled at 88 proof. Sip it neat, at room temperature, and let the agave unfold.
