Psagot Sinai is a red blend from Psagot Winery, grown on chalky limestone terraces 700-900 meters up in Israel's Judean Hills. A best-seller for the Binyamin-based producer, it blends select red varietals aged in stainless steel tanks fitted with wood staves for structure without heavy oak. Expect deep garnet color, aromas of raspberry, blackberry, and juniper, and a palate of pomegranate and black pepper rounded out by Mediterranean herbs like oregano and thyme, finishing on velvety tannins. Pour it alongside grilled meats or hard cheeses, or simply on its own.
