Psagot Edom is the flagship red blend from Psagot Winery, grown on ancient limestone terraces roughly 900 meters up in the Judean Hills of Binyamin, Israel. This Bordeaux-style blend leans on Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, aged over a year in French oak. Expect a medium-to-full-bodied glass with layered dark fruit, cassis, and cherry, backed by cedar and spice from the barrel. The label carries an image of a 2,000-year-old coin unearthed during the winery's construction. Pour it alongside braised short rib or aged hard cheese.
