Psagot Cabernet Sauvignon Single Vineyard is a dry red wine from a single estate plot in Israel's Judean Hills, grown on chalky limestone terraces roughly 900 meters up in the Binyamin region. Psagot hand-harvests these Cabernet grapes at dawn, then ages the wine 13 months in French oak. Expect a full-bodied glass layered with black cherry, blackcurrant, and vanilla-oak aromatics, rounded out by notes of lavender, licorice, and dried tobacco leaf. Pour it alongside braised short rib or rack of lamb for a dinner-table centerpiece.
