Agaves get slow-roasted in stone ovens, fermented with wild yeast in wooden vats, and distilled in copper, then cut with local spring water. Expect sweet cooked agave, black pepper, and a hint of cinnamon over a silky, oily body. Pour it neat, or build a bright margarita.
