Here's a blanco with a birth certificate: the 1861 marks the year Pedro Camarena Ramirez was born, and six generations later the family still makes it by hand in the highlands of Jalisco. Agaves get slow-roasted in stone ovens, fermented with wild yeast in wooden vats, and distilled in copper, then cut with local spring water. Expect sweet cooked agave, black pepper, and a hint of cinnamon over a silky, oily body. Pour it neat, or build a bright margarita.
