Overview

Tucked along Normandy's Cider Route in Cambremer, the Huet family has been pressing apples into Calvados since 1865. Their Pays d'Auge estate grows 25 cider-apple varieties across 30 hectares, double-distilled in a traditional copper alambic and rested in oak. Expect newly picked apples cooked in butter, a whisper of mint, then a frank orchard-fruit finish. Since 2010 the stills run on estate wood chips, a quiet nod to old-meets-new. Pour a small glass after dinner, or reach for it in a cocktail.
