Most mezcal fans know espadin. Cirial is a different story: a wild Agave karwinskii that spends twelve years in the ground before Perro de San Juan's team in San Dionisio Ocotepec, Oaxaca, ever touches it. Roasted over ocote wood, fermented in wood vats, then double-distilled in copper stills at 42.5% ABV, it pours green and mineral — think green pepper, cactus, and citrus up front, with melon, mint, and a salty, earthy finish.
