Named for Ernest Hemingway's beloved fishing boat, Papa's Pilar Blonde is a light rum with real range. Six rums from the Dominican Republic, Panama, Venezuela and Florida are solera-blended, then finished in bourbon barrels and Spanish Oloroso sherry casks. The nose leans bright with citrus, almond, apricot and butterscotch, while the palate turns buttery with mango, citrus and vanilla and a whisper of ripe banana on the dry finish. At 84 proof, it has enough body for a standout daiquiri or a slow neat pour.
