Made in the tiny Oaxacan village of Santa María Ixcatlán, this agave spirit comes from mezcalero Amando Alvarado Alvarez and the wild papalomé maguey that's grown there for generations. The hearts roast in an underground pit, get milled by hand with wooden mallets, then ferment in hanging cowhide sacks before a double distillation in small clay pots. Expect citrus, honey and ripe peach with a dry, leathery edge. Pour it neat and sip slowly, one small glass at a time.
