Paniolo takes its name from Hawaii's cowboys, the vaqueros who rode Maui's Upcountry ranches long before pineapple did. Hali'imaile Distilling blends three-year Kentucky straight bourbon with their own Maui Gold pineapple distillate, run to neutral so it smooths the spirit rather than flavoring it. The result leans toward caramel, brown sugar, vanilla, and sweet corn, finishing clean and easy. Pour it neat to catch the balance, or build it into a Hawaiian stone sour when the afternoon calls for one.
Tasting notes
Blending mainland tradition with Hawaiian history, Paniolo Whiskey combines bourbon with Maui Gold Pineapple. The pineapple is distilled to neutral to allow for an extremely clean and smooth whiskey with notes of brown sugar, caramel, and sweet corn.
