New Deal built its own custom pot still in Portland's industrial district back in 2004, specifically so the oils and tannins from whole botanicals stick around instead of getting stripped out. The payoff shows in Gin No. 1: juniper up front, then cracked black pepper and citrus peel settling into a surprising celery-salt finish, silky rather than sharp. It won silver at the 2014 American Craft Spirit Awards. Pour it into a dirty martini or sip it neat to catch the full range.
