Madrecuixe is one of the rare Karwinskii agaves — tall and columnar rather than the round espadín you usually meet — and El Jolgorio lets a single, wild-harvested variety speak for itself. Grown for over a decade in the hills around Santa María Zoquitlán, Oaxaca, it's pit-roasted, tahona-crushed by mule, open-fermented, and double-distilled in copper by mezcalero Ignacio Parada. Expect earthy wet-clay minerality with a cool eucalyptus lift and soft vegetal notes. Sip it neat, slowly, at room temperature.
