Macallan's Classic Cut is less a bottling than an experiment: it's finished at a robust 50.3% ABV specifically so you can 'cut' it yourself. Matured in a marriage of sherry-seasoned European oak and ex-bourbon American oak casks, it opens with pear, elderflower and vanilla, settling into an oak-and-almond finish. Add a few drops of water and the toasted almond turns to biscotti and marzipan — a different dram in the same glass. Try it both ways, in a Glencairn, before deciding which side you're on.
