Locke + Co. ages this in new 30-gallon Minnesota oak barrels for two-plus years, then drops in hand-cut, hand-charred aspen wood discs to finish for another eight months. The result runs sweet up front with cherry and vanilla, opening into caramel, maple syrup, tobacco and cinnamon before a clean ginger-and-black-pepper close.
