Lobos 1707 takes Oaxacan mezcal somewhere unexpected: 100% Espadín agave, roasted in a wood-fired horno on the Sierra's volcanic slopes, then rested in Pedro Ximénez sherry casks shipped over from Spain. The Spanish wine barrels soften the smoke without erasing it — expect hickory char, toasted piñon, black pepper, and a thread of young pineapple sweetness underneath. Sip it neat to catch that push-pull between smoke and fruit, or shake it into a mezcal sour where the PX finish really shows off.
