Leopold Bros. hand-malts its own barley on Colorado's first distillery floor-malting room, then folds in Abruzzi heritage rye alongside corn for a mash bill you don't see often: 64% corn, 21% malted barley, 15% rye. Open-fermented with house and wild yeast, pot distilled, and aged five years on earthen floors in an unheated Denver warehouse, it lands at a true bottled-in-bond 100 proof. Expect grainy Wheaties-cereal notes, ginger, and a nutty, cinnamon-warm finish. Pour it neat to catch every layer.
Tasting notes
The barley influence is apparent right from the get go with a nose full of roasted malt, cocoa, straw, fresh baked bread, soft fruits, and a hint of rye spice. The palate follows with a full body, creamy mouthfeel, and notes of cinnamon, toffee, pear, cola, and cracked black pepper. The finish is soft and silky, lingering on dark baking chocolate, roasted malt, and cherries.
