Cassis this good has a paper trail back to 1841, when Auguste-Denis Lagoute invented Creme de Cassis in Dijon outright, and Lejay remains one of only four houses still permitted to label a bottle Creme de Cassis de Dijon. Whole Noir de Bourgogne and Black Down blackcurrants macerate for weeks before pressing, yielding a deep maroon liqueur with concentrated blackcurrant fruit and a long, jammy finish at 20% ABV. Splash it into chilled dry white wine for a classic Kir, or Champagne for a Kir Royal.
