It's an ensemble of espadin and wild cuishe agave, roasted in a stone-lined pit, crushed by a horse-drawn tahona, and double-distilled in copper the old way, no electricity involved, at a family palenque in Lachila, Oaxaca. Expect light smoke giving way to sweet agave fruit, citrus, and a touch of caramel. Sip it neat, or use it to anchor a smoky margarita.
