L'Astemia Pentita — "the repentant teetotaler" — is the unlikely name Sandra Vezza gave her Barolo winery after a lifetime of never touching wine. Her Adorabile rosé comes from hillside vineyards in the Langhe, made with brief skin contact, cool stainless fermentation, and a short rest in steel before bottling. It pours a deep onion-skin pink with aromas of plum and raspberry layered over citrus jam and a whisper of flint, structured on the palate with a pleasantly bitter finish. Serve it as an aperitif alongside cured meats and antipasti.
