Cortese has grown in Piedmont's Gavi hills for centuries, but it took the Soldati family to turn it into something serious — this bottling comes from vines over sixty years old on the high ground of Rovereto Superiore. Cold-fermented in steel and left on native lees through bottling, it pours pale straw-yellow with a bouquet that shifts from fruity to floral as it opens, then finishes on almond, walnut, and a citrus edge. Pour it chilled alongside oysters, crab, or roast chicken.
