Deep in Michoacán's hills, La Luna's Bruto comes from Inaequidens agave — a wild, towering maguey with low sugar and painstaking yield, fermented with pulque made from the same plant to coax it along. The Perez Escot family, four generations into mezcal-making near Villa Madero, cooks it up to 168 hours before slow fermentation. Expect smoked leather, citrus zest, and wet earth on the nose, opening into black pepper, grilled stone fruit, and bright herbs. Sip it neat, slightly chilled, to let the smoke unwind.
