La Higuera Texanum Sotol comes from Aldama, Chihuahua, where Maestro Sotolero Gerardo Ruelas distills it from wild-harvested Dasylirion texanum, a desert plant related to agave that grows across the Chihuahuan Desert and into Texas. The piñas are pit-roasted, hand-milled with axes, fermented with wild airborne yeast in pine vats, then double-distilled in copper stills. Expect dried grass, mineral, and light smoke on the nose, giving way to sunflower seed and caramel across a velvety, medium-to-full-bodied palate. Sip it neat to track the terroir, or pour over a single ice cube.
