La Higuera Dasylirion Wheeleri is an unaged sotol from Aldama, Chihuahua, made by third-generation maestro sotolero Gerardo Ruelas using wild dasylirion wheeleri (desert spoon) plants harvested from his family's high-elevation land. The piñas are roasted in underground ovens over wood and rocks, hand-crushed, fermented with wild yeast in wooden vats, then double-distilled in copper stills. Expect an herbal, mineral profile with lemongrass and thyme up front, easing into green apple and a whisper of smoke. Sip neat to explore sotol's terroir-driven character, or build it into a smoky, savory Paloma.
