La Higuera Sotol Dasylirion Leiophyllum is a small-batch sotol from Aldama, Chihuahua, distilled from the wild leiophyllum species of desert spoon plant. Third-generation Maestro Sotolero Gerardo Ruelas hand-harvests the plants, roasts them in an outdoor conical oven, then mills the cooked hearts by axe. Wild yeast ferments the mash in 1,000-liter pine vats before double distillation in copper alembic stills, yielding an earthy, mineral spirit with a fruit-forward finish. Pour it neat to taste the terroir, or shake it into a Paloma-style highball with grapefruit soda.
