La Higuera Sotol Dasylirion Cedrosanum comes from Aldama, Chihuahua, one of the three Mexican states authorized to produce sotol. Master sotolero Gerardo Ruelas hand-harvests wild Dasylirion cedrosanum from the surrounding desert hills, cooks the piñas in an earthen pit, mills them by hand with axes, then ferments with wild yeast in wooden vats before double-distilling in copper alembic stills. Expect mineral and caramel notes up front, smoked grass and cedar on the palate, and a long, dry finish. Sip it neat to taste the desert plant's character, or use it to bring smoky depth to a Paloma-style cocktail.
