Melly Barajas distills this at her own small plant in Valle de Guadalupe, Jalisco (NOM 1533), from agave grown eight to ten years. The piñas steam 24 hours in thick-walled earthen ovens, ferment naturally in open steel vats, then distill twice. Six months in used Jack Daniel's and Balcones barrels; the bottle is blown from recycled glass.
