Koval Barreled Gin starts as the Chicago distillery's organic Dry Gin — a rye white whiskey base redistilled with 13 botanicals including juniper, angelica root, coriander, and rose hip. Instead of bottling straight, Koval rests it roughly six months in its own charred whiskey barrels, pulling in vanilla, butterscotch, and oak spice while the juniper backbone stays intact underneath. The result sips like a gin-whiskey hybrid: piney and peppery up front, warm and honeyed on the finish. Pour it neat, or swap it into an Old Fashioned or Negroni for extra depth.
