Most rum ages a few years. This one from Cartagena's Destileria Columbiana spends decades doing it — a Colombian rum made from pure pressed sugar cane juice, blended 70% column-still with 30% pot still, then rested in used American oak bourbon barrels under Dictador's own Hernan Parra. The result: dark chocolate, toasted oak, cream, a whisper of Christmas cake, finishing warm with citrus and spice. Pour it neat in a snifter and give it a few minutes to open.
