Grown on the flint-streaked eastern hills of Sancerre — a rare, stony terroir that makes up just a fifth of the appellation — this Sauvignon Blanc gets a slow build: gentle pressing, split fermentation between steel and concrete, then months on the lees with regular stirring for texture.
