Grown on the flint-streaked eastern hills of Sancerre — a rare, stony terroir that makes up just a fifth of the appellation — this Sauvignon Blanc gets a slow build: gentle pressing, split fermentation between steel and concrete, then months on the lees with regular stirring for texture. The result is pale gold with green glints, its nose laced with citrus, fennel, and a whisper of flint smoke, palate taut and saline with real length.
