Sancerre with real range: this cuvée from J. de Villebois blends fruit from all three of the appellation's classic terroirs — flinty silex, clay-limestone, and stony caillottes — for a Sauvignon Blanc that's more layered than most. After a gentle press, the juice ferments in stainless steel, then rests on its lees for at least six months before blending, building texture without a trace of oak. Expect citrus and gooseberry with a long, mineral finish. Pour it with fresh oysters or a Loire-style goat cheese.
