Insólito translates to "uncommon," and this blanco earns the name: it's distilled at Mexico's highest-altitude distillery, 7,200 feet up in the Sierra del Tigre mountains of Jalisco. Brothers Octavio and Alberto Herrera run their alembic pot stills slow, about ten minutes per liter versus the industry's two, using only agave, water, and yeast. The result is a 100% blue Weber agave spirit with notes of basil, mint, anise, and citrus, settling into a buttery, smooth finish. Try it neat and chilled, or built into a margarita.
